Tandoori aloo skewers with mint garlic cheese sauce

INGREDIENTS FOR TANDOORI ALOO :

1. BOILED POTATOES 9-11 SMALL SIZE

2. HUNG CURD 1/2 CUP

3. MUSTARD OIL 1 TBSP

4. KASHMIRI RED CHILLI POWDER 2 TSP

5. CORIANDER POWDER 1 TSP

6. GINGER GARLIC PASTE 1 TSP

7. CUMIN POWDER 1/2 TSP

8. GARAM MASALA 1/2 TSP

9. AMCHUR POWDER 1/2 TSP

10. BLACK SALT as per your taste preference

11. SALT as per your taste preference

12. GARLIC POWDER 1 TSP

13. ROASTED BESAN 1 TBSP

14. LIVE CHARCOAL + GHEE

15. SLICED ONIONS

16. SLICED LEMON


INGREDIENTS FOR MINT GARLIC CHEESE SAUCE

1. OLIVE OIL 1 TBSP

2. BUTTER 1 TBSP

3. MIXED HERBS 1/2 TSP

4. OREGANO 1/2 TSP

5. CHILLI FLAKES 1/2 TSP

6. SALT as per your taste preference

7. BLACK PEPPER 1/2 TSP

8. FRESH CREAM 2 TBSP

9. MILK 1 TBSP

10.SLICED CHEESE 2 SLICES

11. MILK POWDER 1 TBSP

12. DRIED MINT LEAVES

13. Minced garlic/garlic powder 1tsp


METHOD :

For tandoori aloo

Prepare the marination In a mixing bowl by adding mustard oil, ginger garlic paste,all the spices, hung curd, roasted besan and mix well.Add boiled baby potatoes and coat it well with the marinade.Place live charcoal in a small bowl over the marination and add few drops of ghee.Cover and smoke the potatoes for 3-4 mins. Rest it for 25-30 mins after the smoke.

heat ghee in a pan and cook the potatoes from all sides until golden brown and crisp.Skew the potatoes in the skewers.

For the mint garlic cheese sauce-

Heat a pan and add olive oil and butter.then add minced garlic or garlic powder, oregano mixed herbs, chilli flakes.now add fresh cream and milk and cook it for 2-3 mins. Now add sliced cheese and milk powder,add salt, pepper and dried mint leaves.Cook till the sauce is semi thick.

Serve hot tandoori aloo skewers with mint garlic cheese sauce and sliced onions and lemons and sprinkle mint leaves or coriander leaves.


SUBSTITUTES

  1. You can use rice flour or refined flour or sattu instead of roasted besan

  2. You can have tandoori aloo with mint-corriander sauce

  3. You can skip cheese in the sauce, if you want to have it healthy.

  4. You can bake it in a oven at 180-200 degree Celsius for 25-30 mins.

  5. You can fry it in air fryer for 15 mins at 180 degree celcius, but prick the potatoes after boiling it.
