Spaghetti aglio olio is a traditional Italian pasta dish from Naples. It is a typical dish of Neapolitan cuisine. The dish is made by lightly sauteing sliced, minced, or pressed garlic in olive oil, sometimes with the addition of dried red chili flakes, and tossing with spaghetti and topped with parmesan cheese.
Ingredients:
Olive oil 4 tbsp
Garlic cloves 10-11 garlic cloves
Chilli flakes 2 tbsp
Spaghetti - 300 gm
1/2 cup water
1 TSP garlic powder
1 TSP oregano
1 TSP mixed herbs
1 TSP black pepper powder
Salt as per taste
1/2 cup cheese
1 TSP basil powder
Process :
Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water and add 1 TSP olive oil and salt as per taste, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain and transfer to a pasta bowl.
In a pan on medium flame add olive oil, then add garlic cloves and slow cook the garlic till it's get light brown in colour. Add chilli flakes and mix it Now, add spaghetti and mix it, then add garlic powder, oregano, mixed herbs, black pepper powder and salt as per taste. Then add cheese and top it of with basil powder and chilli flakes.
Spaghetti Aglio olio is ready.
Notes:
Traditionally parmesan cheese is used in spaghetti Aglio olio, I have used processed cheese in this recipe.
For extra richness add 1 tablespoon of butter when you toss with the cheese.
You can also add vegetables and mushroom after sauteing garlic
